Friday’s afternoon activity was perfect for this overcast day, as the student gathered in the kitchen for some snacks, beer and world trivia. They divided themselves into teams, putting their world knowledge minds together, to win the Quiz Master title. The questions were based on; rivers, planets, capital cities, oceans and seas, islands, and geographic locations. All teams showed a great deal of knowledge, but the stand out team was Team Rocco who scored 21/26. Well done boys, you are our Quiz Masters! Enjoy your afternoon beers!

Healthy Cooking Kitchen: Curry Cooking Class

Yesterday, we had a fun cooking class where 8 students created a delicious healthy Massaman Curry from scratch. We used all fresh herbs and spices to develop our paste and then added some puree pumpkin, soy and almond milk, coconut cream with some chicken and extra chunks of pumpkin.

The result was fantastic, with a delicious dish that was served with fresh coriander and cashew nuts.

Relax and Unwind before exams

It’s a big week for the Cambridge students with their final exams coming up, so this morning’s beach yoga session was a great way for them to release the stress from their busy minds and relax through some Pranayama, Asana and Savasana. Another beautiful way to start our Tuesday!

What a amazing afternoon yesterday. We all got into our swimwear and headed down to Noosa Main Beach for a friendly game of Beach Volleyball. It was a hot afternoon, so everyone was happy to get down into their swimwear to play. After the competition we were all able to cool down in the ocean with a swim!

How to de-stress before exams

There were so many students walking on Sunshine Beach yesterday early evening.  Strolling in groups, jogging, swimming and catching waves. I thought to myself what a wonderful way  to de-stress before exams or unwind after a day spent in the classroom.

sunshine beachIt is nearly time for our Cambridge First, Cambridge Advanced and Cambridge Proficiency students to take their exams.  My advice to you all is that by the end of next week you will have learnt all you need or can know and it is time to relax and de-stress. What better way to do this then with Beach walks, National Park picnics and Ocean swims? Good luck everyone.

Social Surfing

It’s so lovely to be able to catch up with friends in the morning for a social surf. The Lexis Noosa students meet  each other down the beach every Thursday morning to catch up for a social surf. If you have your own surfboard and would like to join, please see the notice board for details on the conditions and meeting places. Anj will decide where would be the best location to surf on the Thursday mornings, will assist with surfing techniques and tips and when the surf is really good, will take some footage of the students surfing. Then you can watch that footage later on in the day on the TV in the kitchen 🙂

Indoor Soccer

Our soccer match against Maroochydore didn’t turn out as planned yesterday, with a large storm hitting the Noosa area. With the grounds closed we had to cancel the match 🙁

Luckily, Noosa has some great facilities, and instead we were able to play some indoor soccer at the Noosa Leisure Center. Indoor soccer is a great way to practice individual skills but also pass plays and working with other team players. Until next time Maroochy…

Healthy Cooking Kitchen: Healthy Desserts

It’s common knowledge that cakes, puddings and so on are loaded with saturated fats, sugar and salt, all of which can wreak havoc on blood sugar levels and contribute to weight gain. But there are many ways to make satisfying sweet treats that are wholesome too. The secret to making delicious and healthy desserts comes down to two key factors: the ingredients you choose and how you cook them.  I like to reduce saturated fats by substituting butter for anti-inflammatory oils such as macadamia or light olive oil. You can easily reduce refined sugars by halving the amount called for, or using natural sweeteners from fruit. Spices such as cinnamon, nutmeg, orange zest and vanilla bean enhance other flavours in much the same way as salt does.

When baking, be adventurous and get out of the habit of using plain or self-raising white flour. Highly refined products such as this can contribute to high insulin levels. Swap white flour for a delicious wholegrain flour such as spelt, quinoa, oats, linseed or buckwheat. My favourite flour for baking is almond meal (ground almonds) – because it so sweet and moist, you don’t need to add much sugar or fat, plus it has the added benefit of being high in protein and gluten-free. I also increase the nutrient profile by adding fruit for extra fibre, vitamins and sweetness.

What’s great about it:
Almonds are high in vitamin E, an antioxidant that can help fight off free radicals for a healthy immune system.  They are also a great source of potassium, a mineral necessary for nerve transmission and the contraction of all muscles including the heart. Cacao is a super bean! It is loaded with antioxidants and essential micronutrients for health and vitality. It’s a great source of magnesium, which aids calcium absorption, metabolism and protein synthesis.

Snapshot Tuesday 2.20 pm

Compulsory classes end at 2 pm. So what is happening in the school?  I decided to have a look around.

1420Senior teacher Annette is helping GIL students. IELTS students are in the Cambridge Computer Suite. Anj is conducting a healthy cooking class in the kitchen and Tim is showing his Cambridge Proficiency students a video. Cambridge First students are attending a workshop and teachers are in the staffroom preparing lessons. Meanwhile students chat in the courtyard or play table tennis. Our morning beach yoga session allows us to reconnect our minds back to the body. It is not all about standing on our heads, it is about calming the mind and becoming present. In the beautiful natural surrounding of Sunshine Beach, we are able to use our breath to move in and out of different Asana poses, allowing us to be in and enjoy the present moment and appreciate how lucky we are to live in such a beautiful place.

It was a humid day yesterday and a beautiful day to jump in the water and practice our body surfing skills. We made our way to Main Beach, where a light offshore was blowing, but unfortunately the waves were small, but we did our best with the conditions we had.

It was great to see some exceptional body surfing out in the water, a great skill to have to strengthen our confidence and abilities in the ocean!

Last week, the students began their soccer practice in anticipation for their match against Maroocchydore this week. We gathered down at Lion’s Park for soccer training on Thursday and hit the beach on Friday afternoon for a friendly beach soccer match. The cooking option is much loved at Lexis Noosa. Students enjoy meeting new people, talking about food, learning new vocabulary and recipes, preparing and eating together.

Taiwanese Cooking Class

Today, we were joined by Chef Chen (Lexis Noosa Student) in the kitchen, to cooking up a storm with one of his favourite dishes from his home country, Taiwan. The recipe required a kilogram of chicken, a cup of sesame seed oil, soy sauce, and beer with eight cloves of garlic,10g of ginger and 2 cups of fresh basil seasoned with a teaspoon of salt.

Surfing Sunshine Beach

There was a lack of interest for Frisbee so the students choose the activity they would like to do for this afternoon- and that was, Surfing. This being one of my favourite activities, there was no dispute in take the students down to Sunshine beach to catch some waves. With a bank to ourselves, we were join by Lucas and Will from Brazil, Tomo from Switzerland and Miyru from Japan.

My name is Monica Frau and this is my story.

IMG_3919 I ‘m 39 year old.. I’m from Sardinia ( Italy ) . I arrived in noosa six months ago, I’m staying here to learn English , it’s very important for me because I’m a waitress and for my job is essential . There had been so many problems for both the language for the job .. but now it is much better…  In Lexis school I’ve known so many wonderful people , I learned a lot , I’ve known very good and prepared teachers….
